I just love El Pollo Loco chicken, so I was thrilled when I found this recipe. I just mix up the marinade and put it in a Ziploc bag overnight, and turn it every now and then to make sure the chicken is well coated. Then just throw it on the grill.
I served it with my version of crazy beans and some corn mixed with a little salsa. It’s a great spring or summer grill recipe. And low in calories and sodium. The only thing missing is the orange food coloring that El Pollo Loco uses, but to be honest, I don’t miss a the fake color at all.
Ingredients
1 4-pound chicken, cut up
1 T white vinegar
2 cloves garlic, minced
1/2 t oregano
1/8 t pepper
1/4 t jalapeno peppers, finely diced
6 ounces pineapple juice
1 T olive oil
Directions
Combine all the ingredients, except the chicken. Reserve 1/4 C of the marinade to use for basting the chicken. Marinate chicken overnight in remaining marinade. Turn chicken during while marinating, to make sure it’s all evenly coated.
Grill chicken on BBQ, and baste with remaining marinade.
