I’ve seen this recipe in a variety of incarnations on the internet, so I decided to give the simpler low-calorie version a try. I used Pace garden vegetable salsa, but you can really use any type of salsa you choose.
Here’s a quick and easy lunch recipe. For an Asian dish, it’s pretty low in sodium too. And with ¾ cup of rice it’s just over 300 calories – the perfect target for lunch.
I have to admit I kind of chuckled at the name of this recipe when a Facebook friend shared it with me; however after trying it I think the name is spot on. Holy yum Batman, this chicken is delicious!
