This is a healthier take on traditional ham salad. It’s light on the mayonnaise, but packed full of flavor. If you serve it on Sara Lee 45 Calories and Delightful bread, you’ll have a very filling lunch for under 250 calories. It’s a great way to use leftover ham. I should also note that because of sodium issues, I only buy ham once a year, and I never use a glaze on it. I usually buy the Kirkland Spiral Cut Ham at Costco, because if you keep the portion to 2-3 ounces, it’s not too bad on the sodium. But, the key is definitely portion control.
And if you don’t have the Murphy’s mustard, then just substitute any sweet mustard.
