Homemade Breakfast Taquitos

Ingredients

1//2 onion, minced
1 clove garlic, minced
2 jalapeno peppers, minced
1/2 red bell pepper, chopped
1 C mushrooms, chopped
6 large (12 small) eggs
1/4 C non-fat milk
Mrs. Dash
basque seasoning
crushed pepper flakes
18 6-inch home made flour tortillas

Directions

Heat oil over medium heat, and sauté onion, garlic and jalapenos until onion is translucent. Add mushrooms and cook for two minutes.

Whisk eggs with milk. Add to vegetable mixture and scramble. Add Mrs. Dash, basque seasoning and crushed pepper flakes to taste.

Wrap tortillas in paper towel and warm in microwave for 30 seconds.

Put 1 T egg mixture in the center of one tortilla, roll up and place seam side down on cookie sheet sprayed with non-stick cooking spray. Repeat with remaining tortillas.

Bake for 10 minutes at 425.
