Here’s a quick and easy dinner recipe. Just cut up the chicken, throw it in the crock pot, add the other ingredients, and you’re good to go. It’s pretty low calorie and very filling. Make sure and use the reduced-sodium soy sauce to cut down on the sodium content. Serve with rice and veggies. It also freezes very well.
1 pound skinless, boneless chicken breasts, cut in bite-sized pieces
1 20-ounce can pineapple chunks
¼ C reduced-sodium soy sauce
1 t red pepper flakes
Place chicken in crock pot. Drain the pineapple, and add to crock pot. Top with soy sauce and red pepper flakes.
Cook on low for 3-4 hours.
