On our recent trip to Truth or Consequences, we decided to try another strategy for healthy eating on the road. Instead of shopping as we go, we decided to pack along all of our food with us. Sounds simple enough, eh? Well it took a little planning; and in the end we were only able to do it because we landed in one place for the majority of our stay.

Ham and Cheese Pockets make a filling a low calorie appetizer

When I first created this recipe I made it with Jennie O Turkey ham; but once I discovered that Kirkland ham has just about the same amount of sodium I switched over to that. Either way works just fine. The key here is portion control, because with a relatively small amount of ham you can have a very flavorful appetizer. I usually make four and my husband and I split them. They’re pretty tasty, and at 98 calories and 310 mg. of sodium, we’re not even being bad! Continue reading

Chicken and Broccoli Pie -- low calorie and tasty!

This quick and easy recipe makes a great Sunday brunch dish. And since there’s just two of us, we freeze the leftovers for another time. Believe me, it tastes like it took a lot more work than it did, and at just 160 calories you can even have a piece of bacon or maybe some chicken sausage on the side. Trader Joe’s Crab Cakes

Trader Joe's Maryland Style Crab Cakes -- not as good as my own, but not bad.

Sometimes necessity is the mother of invention. Take the other day for example. I was shopping in Trader Joe’s and I had my home made crab cakes on the lunch menu; but I couldn’t find their canned crab. It’s what I always use because it’s lower in sodium than some of the fresh crab cooked in salt water. In any case, it makes up a tasty set of crab cakes for the two of us, and it’s become a menu favorite.

Low Calorie Ham & Swiss Lunch Roll

This Ham and Swiss Lunch Roll make a tasty and low calorie lunch.

Here’s a fun little lunch recipe that’s just great for leftover ham. It’s a little higher than I like to go sodium-wise, but if I really watch what I eat the rest of the day it’s doable. Pair it with a side salad with little or no dressing and you have a very tasty lunchtime treat. It also freezes very well, and it’s great to take to work to reheat.

Especially when you’re taking antibiotics that apparently destroy all the good digestive bacteria in your gut. Suffice it to say I was miserable last month – miserable enough to buy a case of Activia at the big box store.

Denny’s New Fit Fare Menu

Denny’s appears to be turning over a new leaf in 2012, as they’re promoting their new Fit Fare menu items. Granted you don’t usually think of Denny’s as a place that offers healthy eating options – after all, these are the folks who introduced the Mac ‘n Cheese Big Daddy Patty Melt (1690 calories, 2010 mg. sodium), and let’s not even talk about the maple bacon sundae.

Turkey Ham vs. the Real Thing

OK, I admit it, I’ve never been a real big ham fan. Oh sure I’ll eat it if it’s offered to me as a dinner guest, and I’ve even been known to order it now and again at restaurants. But it’s not one of those things that I absolutely have to have. And since it’s pretty high in sodium, I’ve taken to getting a Jennie-O turkey ham whenever we want one.

Curried Chicken and Rice Tartlets

Curried Chicken Tartlets fresh from the oven. Yum!

Here’s a fun little snack recipe made with phyllo dough. It’s not one that freezes well, so you have to pretty much make what you are going to eat. I do the 12 servings because it works well in my muffin tin, but I stick half of them in the refrigerator and have them the next night. So Charles and I each have 3 as an appetizer, which works out to 147 calories and 147 mg. Sodium. Very doable and quite tasty! Continue reading
